How the Numbers Work

Permit cost estimates are sourced directly from city health department and business licensing fee schedules, not extrapolated. Monthly operating cost estimates use industry survey averages for commissary fees, fuel, supplies, and credit card processing. Truck cost ranges reflect dealer listings for used and new builds.

Health department and business licensing fees sourced from 200+ city websites. Includes food handler permits, mobile food facility permits, and commissary requirements.

SBA Small Business Startup Research

Used for equipment cost ranges and general startup cost benchmarks.

FDA Food Safety Modernization Act Requirements

Federal baseline requirements that apply regardless of location.

Commercial Insurance Premium Data

Typical premium ranges for commercial vehicle and general liability coverage from industry sources.

Limitations

Permit requirements change frequently. Cities add, remove, and modify requirements. Some cities have moratoriums on new permits. Monthly cost estimates are averages; food type, hours, and location affect actual costs significantly. We do not cover all cities. If yours isn't listed, contact the city health department directly.
